Couscous Salad:
-100g (raw weight) couscous
-hot veg broth to cover the couscous
-1/2 cucumber
-1 tomato
-1/2 block smoked tofu
-3 TBSP hummus
-2 TBSP vinegar
-salt and pepper to taste
-1 TSP each ground cumin and paprika
-1/2 TSP each ground coriander and garlic powder
CHOP UP everything and MIX
Smokey chili:
-1 onion
-2 cloves garlic
-1 bell pepper
-1 can (220g) each corn and beans
-1 can (400g) crushed tomatoes
-1/2 cup (125ml) water
-1 TSP each cumin, smoked paprika, salt,
-1/2 TSP each sweet paprika, chili flakes, cinnamon
FRY the veggies and spices first/ADD the rest and let it simmer for at least 15min
Spicy tofu wrap:
-1 block (200g) firm tofu
-1 1/2 TBSP starch
-oil for frying
-2 TBSP soy sauce
-1 TSP each smoked paprika, cumin
-1/2 TSP each garlic powder, chili flakes
-2 wraps
-vegan yogurt and fresh veggies for filling
TOSS the tofu in the starch and fry golden brown/ADD soy sauce and spices, keep frying/FILL your tortilla wrap
