EASY VEGAN MEALS FOR WEIGHT LOSS



Today I’m showing you an easy vegan meal for weight loss. This vegan meal is whole foods plant based and falls in line with The Starch Solution Plus! It has helped me lose 50 Lbs in one year easily. For me this vegan dish has become a plant based staple meal for health and weight loss, which is exactly why I want to share it with you today. Eating a clean, vegan, plant based lifestyle has really transformed me from the inside out and I hope to help and inspire you on your health and weight loss journey.

RECIPES IN THIS VIDEO:

RED THAI CURRY:
1 onion chopped
1 bell pepper chopped
4 cloves of garlic
2 tsp minced ginger
3 TBSP red curry paste
1/2 block of tofu in cubes
1 can LIGHT coconut milk
1 cup water
4 TBSP low sodium soy sauce
2 cups of chopped broccoli
1 medium sweet potato chopped

Saute veggies. Add paste and mix well. Add everything else in the pot. Cook for 30 minutes or until potatoes are soft. Serve and enjoy!

APPLE PIE OATMEAL CUPS:
Preheat over to 350 degrees
In a large bowl mix together 3 cups of rolled oats, 1/2 tsp cinnamon, 1 tsp baking powder, 1/2 tsp salt. Set aside.

In another bowl mix together 1 1/2 cups of plant milk, 1/4 cup maple syrup, 2 TBSP ground flax seeds, 1 tsp vanilla. Set aside.

In another bow mix together 1/2-3/4 chopped apple, 2 TBSP nut butter, 1.2 tsp cinnamon, 1/2 cup apple butter.

Combine all wet ingredients. Mix well. Then combine wet ingredients with dry ingredients.

Fill muffin pan with mixture and bake for 30-35 minutes, or until golden brown. Serve and enjoy.

Like I said above, this vegan meal for health and weight loss has been a staple plant based meal on my vegan weight loss journey. This dish is perfect if you are following The Starch Solution for weight loss or The McDougall Program for Maximum Weight Loss – just omit coconut milk and use a lower fat plant milk. It is also an excellent, easy vegan meal if you are a beginner to the plant based world and if you are looking to lose some unhealthy weight on a plant based diet.
